No offense, Scott, but do you generally think it's safe to say that a RAID- or Enterprise-class hard drive from any manufacturer is superior in quality to a Seagate SSHD or a Seagate NAS drive?

What offense do you speak of? Note that NAS drives are RAID class drives and SSDs are completely different. Scott.

Scott, how do you think Western Digital NAS drives compare to Western Digital Datacenter drives?

They are definitely lower level, but better than consumer drives. Scott.

Would you recommend a Western Digital NAS drive, Scott? No offense.

I haven't used or tested them myself so I can't offer a recommendation. On the other hand I have used/tested and do recommend the WD Re series Enterprise class drives. Scott.

Scott, when it comes to external enclosures, do you still recommend hard drives that are more reliable than the consumer-level variety? BTW, Happy Thanksgiving! :D

I do try to use and recommend higher quality enterprise class drives where possible, but a lot depends on the budget as well as the application. Happy Thanksgiving! Scott.

Scott, would you consider either a WD Red NAS drive or a WD Red Pro drive a RAID-class drive?

No offense, Scott, is it true that RAID-class hard drives are not necessarily as reliable as Enterprise-class hard drives?

Enterprise class drives generally have additional reliability features as compared to NAS drives. Scott.

So what kind of drive would be more suitable for use with an external enclosure: a NAS drive or a Seagate SSHD?

Either one would work. Which one would be more suitable depends on your capacity, performance and budget needs. Scott.
